Recipe: Healthy dinner for one

Move out they say, it will be fun they say…

No more getting home and having dinner waiting on your arrival, thanks mom. Now it’s all about taking care of yourself. But look on the brights side, Hun:now you can eat what you like, how you like it and when you like it…

I think we can all agree that health and fitness has become the best thing since sliced bread – well apparently bread is out and cauliflower knockoffs are in #justsaying – this recipe will be coming soon… 

Anyway I do speak for myself when I say, I have been on  one diet after the other and today I want to share a super easy, yummy and healthy recipe whether you are cooking for one or a small African village called your family.


You will need:

  1. chicken breast cut into smaller pieces
  2. diced butternut and sweet potato (you can purchase these bags at Pick n Pay – thanx lazy Lucy)
  3. mushrooms (already chopped pack, cause I am still lazy)
  4. baby marrow spaghetti – this is my absolute favourite!!
  5. pesto – any kind really, but pesto will always be a win.
  6. half red onion chopped.

Let’s get cooking:

Preheat the oven to 180˚C.

Start by prepping the ingredients. Place the butternut and sweet potato dices into a oven friendly bowl, add spices – I normally just use salt and pepper, add a bit of olive oil to the mix and wait for the oven to heat up.

While we are waiting on the over, in a second bowl with the chicken pieces, add some olive oil and spice it with mixed herbs. – let that rest for about 5 min at least, but you can do this the day/night before as well.

When the oven is ready pop the butternut and sweet potato in, bake for 15 -20 min, or until soft.

Back to the stove:

Start by cooking the chicken and add chopped red onions, add the mushrooms and cook them until the chicken is almost done. Now add the pesto, let it simmer and cook the chicken throughout. – this will let the chicken absorb the flavours added and not dry out before hand.

Switch off the stove and add the baby marrow spaghetti, you don’t want to cook the spaghetti, you want the raw taste to this so just to warm it up a tad.

When the butternut and sweet potato is completely soft add this to the mix.

Now dish, add some feta and enjoy.


ANOTHER TIP: if you have made to much for one meal, you can  use it as the stuffing for an omelette for breakfast or even in a wrap for lunch.
